In Japan, anchovy is called shirasu which is a type of small fish with a length of less than 2 cm. Shirasu can be found in all supermarkets in Japan. This food ingredient is very popular and famous especially in Kanagawa.
This fish can be eaten raw or boiled. If shirasu is dried after boiling it turns into chirimen. Raw Shirasu spoils more quickly so it can only be eaten close to fishermen. Freshly caught raw Shirasu should be eaten that day. Kanagawa Prefecture is one of the best places to eat raw shirasu.
Shirasu can be caught in any season, but shirasu caught in spring and autumn has a better taste. Shirasu catching is mostly done in Sagami Bay. A specialty in Kanagawa is Shirasu-don, which is shirasu sprinkled over rice. There is also Shirasu Tsukimi-don which means rice bowl that sees the moon. Inside is a raw egg yolk placed in the center which represents the moon.
