Agave nectar (often called Agave syrup) is a very popular sweetener in the natural health community. This sweetener is touted as a healthy alternative to sugar because it has a low glycemic index. The fructose content of sugar is a much bigger problem than its glycemic index.
It contains 60 calories per tablespoon – versus 48 for table sugar – but because it is about 1.5 times sweeter than sugar, you can use less of it. Nutritionally, agave syrup is similar to high-fructose corn syrup. Yet, according to many experts, agave's high fructose concentration makes it an unhealthy sweetener.
This makes agave a good sweetener for vegans (who don't eat honey). Agave nectar has a dark amber color, but has a more neutral flavor than honey. One tablespoon of the sweetener has about 60 calories compared to about 45 and 60 in the same amount of granulated sugar and honey, respectively.
