Spice Paste For Szechuan Kung Pao Stir Fry (Hot) A combination of dried chilli peppers and aromatic spices is used to create this renowned hot and spicy chicken stir-fry dish.

Szechuan Kung Pao Stir Fry (Serves 4): Ingredients: 1 packet Szechuan Kung Pao Stir Fry Spice Paste 350g-450g (3/4-1 lb) chicken breast meat or fillet, cut into bite-sized pieces 1 tsp cornstarch or cornflour 1-2 tbsp vegetable oil 1 packet (60g/2 oz) roasted cashew nuts, almonds or peanuts 1 tbsp sherry port or Chinese wine (optional)
Cooking Instructions: 1. Heat oil in non-stick pan or wok on medium-high heat. Coat chicken with cornstarch or cornflour 2. Add chicken and stir-fry for 1 minute. Add spice paste and fry for another 2 minutes 3. Add wine and stir-fry until meat is cooked. Mix in nuts. Serve hot with rice or noodles
Cooking Tips: Turkey or seafood may be used instead of chicken. If a vegetarian meal is preferred, use 450g (1 lb) vegetables of your choice to replace meat.
